It is a very versatile dish, and it is usually made from. Jollof rice is one of the most common West African dishes eaten in the regions of Nigeria, Ghana, Togo, Senegal, Gambia, Mali, Sierra Leone, Ivory Coast. Jollof rice and coleslaw step by step

  1. Cook beef with onion,ginger,garlic,spices and seasonings. Dice and keep aside.
  2. Parboil rice with salt and keep aside,chop carrot, green beans and set aside as well.
  3. Heat oil in a pan,add the diced meat and fry.
  4. Add the chopped onion, blended scotch bonnet, ginger and garlic paste,keep stirring.
  5. Add in the veggies, spices and seasonings,stir very well and add the parboiled rice. Stir and simmer on low heat till rice is soft..
  6. In a salad bowl, add shredded cabbage,grated carrot,chopped cucumber,green beans and sliced egg..
  7. Mix mayo with black pepper, milk and little sugar and add to the coleslaw.
  8. Add pinch of salt and very little grated onion(just for scent) and mix well and its done.

It could also be served with fried plantains, with a dish called moi-moi, which is actually a Nigerian steamed bean pudding, with coleslaw or steamed vegetables.
